I attend a high intensity kick boxing class every Wednesday. Our instructor is always looking for new and healthy 'sweet tooth' options. A friend of mine, creator of Kneadfresh, came up with an amazing treat. She shared them with the group. If you enjoy a healthy, sweet pick me up, try Almond Joy Larabars! Once I had one, I had to have the recipe!
Almond Joy Larabar Ingredients
Ingredients For Almond Joy Larabars
- 9 pitted prunes, chopped
- 15 pitted dates, chopped
- 1/4 cup unsweetened coconut
- 7 raw almonds
- 1 tsp. unsweetened cocoa powder
- 1 tbsp. unsweetened cocoa powder, optional for rolling
- 1 tsp. Stevia (a no calorie sugar alternative), optional for rolling

Making Almond Joy Larabars
- Put the first 5 ingredients in a food processor and blend until sticky and clumping together.
- Add additional nuts or coconut if mix is too wet. Add more dates/prunes if it is too dry.
- Stir in optional mix-ins. Suggestions: vegan chocolate chips, dried cherries, dried cranberries, or craisins.
- Use a Tablespoon to scoop 12, individual servings. Roll in your choice of coconut, cocoa powder, or a mix of 1 Tbsp. cocoa powder and 1 tsp. Stevia.
- Refrigerate until firm and enjoy!
- Makes 12 balls

Other Options for These Amazing Almond Bars
While the recipe called for 15 pitted dates, other options include using all dates or all prunes. Prunes create a "fruitier" flavor while dates are more sugary. Because prunes are stickier than dates, you will use less prunes than dates if ONLY using prunes.
For those of less excited about coconut, perhaps omit this ingredient and add a few more almond.
